What do you want? A drink or a fruit or a plain simple but yummy cupcake!
Since childhood, I have been a fan of the Black Forest flavor. I remember my mom getting a slice of Black forest cake whenever she would visit our local cake shop. But strangely, I was never into cherries. Give it to me as they are, wouldn't eat it.
But lately I think, Cherry is a very under-estimated fruit(my personal opinion!) I have been thinking to develop few other recipes with cherry in them-let's see where that goes.
As for this cupcake, I was tempted to combine Chocolate-Cola combination with Cherry-Chocolate, when I was looking for unique flavors for cupcakes. And I thought to combine them all and get myself a Cherry Cola Chocolate cupcake-sounds yumm...doesn't it?
PS: To give you that Cola fizzy feeling, I have added some popping Candy.
Ingredients
Chocolate Cola Cupcakes
1 ½ Cup Flour
3 tbsp Cocoa powder
½ tsp Baking soda
½ tsp Salt
¾ Cup Caster Sugar
2 Eggs, medium
¾ Cup Coca-Cola
12 tbsp unsalted butter, softened
1 tsp Vanilla Essence
Chocolate and Cherry Filling
1 Cup Chocolate Sauce
10 Cherries, chopped
Popping Candy
Cherry Frosting
Vanilla Buttercream frosting
2 drops Red food gel
½ drop Black food gel
1 tsp Cherry Flavor
Directions
Chocolate and Cherry Filling
1. While the Cupcakes cool, mix the chocolate sauce and chopped cherries. Set them aside for 10 minutes so the cherry flavour mixes with the chocolate sauce.
2. Carve in the centre of the cupcakes upto ¾ of the cupcake and fill the gap with the chocolate cherry filling and add in the Popping Candy.
Chocolate Cola Cupcakes
1. Preheat the oven to 180C (356F) or 160C (320F) for a fan forced oven. Line the Cupcake pan with liners.
2. Sift the flour, Cocoa powder, baking soda, salt and sugar into a mixer bowl. Mix them at a low speed until well combined.
3. Add in the softened butter and mix for 3-4 mins.
4. Mix eggs, Coca-Cola and vanilla essence in a small bowl. Add this mixture to the dry mixture in the mixer bowl.
5. Continue to mix on medium speed until no dry mixture is visible.
6. Divide the batter equally into the Cupcake pan. Fill till ¾ of the liner.
7. Bake for 20-22 mins or until the inserted toothpick comes out clean from the center of the cupcakes.
8. Allow the cupcakes to be cooled completely before adding in the filling and frosting.
Cherry Frosting
1. Mix the Vanilla Buttercream frosting with Cherry flavoring and add in the food gel colors. Combine the mixture gently and completely. Rest the buttercream for few minutes so the color deepens.
Assemble
1. Use a piping tip(I used 1M) at the end of your piping bag and pipe in a tilted swirl motion upwards. Place a cherry on the other side of the tilted frosting.
