Kids are going to enjoy these COTTON CANDY CUPCAKES with BUBBLEGUM frosting!
So these cupcakes are not only for Kids but for Adults too-look at those colours, who wouldn't want to get a bite of those cotton candy cupcakes, and be back into their childhood.
When I was thinking of creating a "for kids" cupcake flavour, I was only thinking on the lines of chocolate flavours, but I was not convinced myself to go down that path. And so when I once went to watch a movie in a theater, I saw a big tub of Candy floss, and I found my flavour!
I did try the reverse combo of Bubblegum cupcakes with Cotton candy frosting, but though the frosting was too sweet in that way. So I decided to go with the opposite.
The Cotton Candy and Bubblegum essence I used in this recipe are from USA. You can use the Bubblegum flavour and Unicorn flavour that is available on the Queen Foods website.
Ingredients
Cotton Candy Cupcakes
1 ½ Cup Flour
½ tsp Baking soda
½ tsp Salt
⅔ Cup Caster Sugar
2 Eggs, medium
10 tbsp unsalted butter, softened
2 tsp Cotton Candy essence
½ Cup Milk
Bubblegum Buttercream
Vanilla Buttercream frosting
1 tsp Bubblegum essence
Directions
Cotton Candy Cupcakes
1. Preheat the oven to 180C (356F) or 160C (320F) for a fan forced oven. Line the Cupcake pan with liners.
2. Sift the flour, baking soda, salt and sugar into a mixer bowl. Mix them at a low speed until well combined.
3. Add in the softened butter and mix for 3-4 mins.
4. Mix eggs and cotton candy essence in a small bowl. Add this mixture to the dry mixture in the mixer bowl.
5. Continue to mix on medium speed until no dry mixture is visible.
6. Divide the batter equally into the Cupcake pan. Fill till ¾ of the liner.
7. Bake for 20-22 mins or until the inserted toothpick comes out clean from the centre of the cupcakes.
8. Allow the cupcakes to be cooled completely before frosting them.
Bubblegum Buttercream
1. Mix the Vanilla Buttercream frosting with Bubblegum essence. Combine the mixture gently and completely.
Assemble
1. Use a piping tip (I used Russian sphere ball tip) at the end of your piping bag and start piping from the center of the cupcake and pull it upwards.
