Easy Strawberry Creamsicles

Summer treat on a stick!

Weather in Melbourne is famously unpredictable! So a day in winter will be hot like summer, but it is the day in summer that turns out to be a cold one which puts a damper on any plans. Though it is Spring here in Australia, some days can go easily up to 28-30 deg Celsius. And for days like these, Popsicle is an easy "Keep it Cool" dessert. I went back and forth, too many times as to which type of popsicle I wanted to make- a pure fruit based, or with nutty flavour, or even a cakesicle, or a chocolate covered popsicle- too many thoughts. I finally decide to go with a creamy one as I had lots of cream in my fridge- simple as that😁Sometimes it is so comforting to use ingredients that you already have at home and make something worth drooling over rather than, sit, make a list of ingredients, make a grocery run and all that.

The recipe calls for basic pantry/fridge items- fruit, cream, sugar, and a not so basic but yummy ingredient @Baileys Strawberry and Cream. I really like having Baileys(Original) from time to time, and when I saw the Strawberry version at Dan Murphy's last weekend- I had to buy it! You can skip this if you like, or make two different batches- one for the Kids(without Baileys) and the boozy bath for the grown-ups. And everyone is happy!

Ingredients

Strawberry Creamsicles

10-15 Strawberries, halved

5 tbsp Caster sugar

250 ml Heavy Whipping Cream

3 tbsp Baileys Strawberry and Cream



Directions


Strawberry Creamsicles

  1. Place the cut strawberries in a blender, add in sugar and blend smooth. You can use hand blender as well.

  2. Divide this mixture into 6 popsicle molds. Freeze for 30 mins.

  3. Remove the mixture and insert popsicle sticks. And freeze again for 30 mins.

  4. Whip the heavy cream in a bowl until stiff peak.

  5. Add in Baileys Strawberries and cream, and mix gently.

  6. Add in this mixture into the popsicle mold.

  7. If required, you can place sliced strawberries on the walls of the mold, and then add in the cream mixture.

  8. Freeze for atleast 8-10 hours.

  9. When ready to serve place mold in warm water for 2-3 mins, so the popsicle can be pulled out of the mold easily.
