Mango Lime Frozen Yogurt

A Fruity Tangy Fro yo!

Mango is my favorite fruit by distant miles. All my childhood I used to look forward to Summer just so that we could eat tons of mangoes- in every form. Back in my home country - India, Alphonso mangoes are considered to be the best kind, and trust me they are, oh so sweet and tasty!

Since moving away from my home, I haven't had the chance to relish alphonso mangoes, as much as I would like to. I haven't quite found any type of mango as sweet as them - so lately I don't eat mangoes as much as I used to. But that's what gave me the motivation to create this fro-yo. I really wanted to use mango in one of my desserts. There are very few types of desserts that mango agrees with. I would have never guessed, a fruit as delicious as mango would be so difficult to be used in recipe creating for desserts.



But hey, I have learnt so much about ingredients over the past two years, now nothing surprises me- I mean not nothing 😜 In my 'Keep it Cool' series I was looking for frozen desserts that can be made during Summer. And when you say Summer, mango is the first thing that comes to my mind! Honestly, I am not a big fan of Frozen Yogurt aka Fro yo, but I do indulge in some fro yo with the sprinkles at the mall, once or maybe twice a year- makes me feel like a child 😊But every-time I buy this, I think one can easily make this at home- and that is exactly what I did! This is such a simple recipe, that I don't think I am ever buying fro yo from a store again. With so many fruits available to us, we can easily make this at home with few simple ingredients.

All you need is frozen fruits, Greek yogurt and honey- that is all! Mix the ingredients in a food processor till it is smooth and creamy; freeze it for few hours, and there you have it. You can absolutely go wild with flavour combination. For an adult version, add your favorite alcohol- you see, there is absolutely nothing that cant be in a fro yo.

Ingredients

Serves 4


Mango Lime Frozen yogurt

2 Cups diced Mango

½ Cup Greek Yogurt

1 tbsp Honey

1 tbsp Lime Juice

Lime rind, as desired

Almond flakes, to decorate



Directions

Mango Lime Frozen yogurt

  1. In a food processor, mix all ingredients until the mixture is smooth and creamy.

  2. Place this mixture in a freeze safe container and freeze for a minimum of 1-2 hours.

  3. When ready to serve, place scoops in bowl, top it with mango cubes, slice of lime and almond flakes.
