Light and Fluffy donuts!
In this health conscious world, it is often difficult to get yourself to eat fried food. But that doesn't mean we need to compromise on the "GOOD STUFF"; by that I meant Fried desserts! I know I know, baking and frying isn't the same thing, but when you want to eat donuts, and at the same time watch that waist line of yours, Baked donuts to the rescue. They are so light, airy and fluffy- they just whisk away in the mouth. And you won't even bother counting down how much you ate. That is the best advantage of baked donuts.
I honestly did not think it would be this easy to make donuts; And if you have read my previous blogs, you know how much I avoid frying-not because I am health conscious or anything- I am just too scared of the oil splutters. That is it!
So with no oil, and just 10-12 minutes required to make these donuts, why wouldn't I opt for baked donuts. And yes, yes they are vegan as well- Triple Bonus. It just keeps on getting better. Now for the tips and tricks part, if you want fluffy donuts, make runny batter. Try to adjust the consistency by adding in more milk-coconut or almond. It will be smooth and runny then. If you want to fry the donuts, make thick batter, reduce the amount of milk and oil, add a pinch more of baking powder (this is to ensure that the donuts are nice round and thick, otherwise they will flatten down. And for the glaze part, you can just use basic icing sugar and milk combination; or add in blueberries; or just top it with White chocolate- do what suits you. You can never go wrong with topping the donut up- how does vegan Nutella sound?!?!
You can also use different berry combos as well- chocolate with strawberry, blackberries, raspberry with white chocolate. I believe berries just make everything taste so much better- what do you think?

Serves: 12
Ingredients
Vegan Blueberry Donuts
2 Cups White Flour
1 tsp Baking powder
½ tsp Baking soda
Salt, as per taste
½ Cup Cane sugar
2 tsp Vanilla extract
1 Cup light coconut/almond milk
¼ Cup coconut oil, melted
1 Cup Blueberries, fresh or frozen
Directions
Vegan Blueberry Donuts
Preheat the oven to 205C (400F). Grease a donut pan.
Mix all dry ingredients in a mixing bowl.
Add in all wet ingredients.
Add in semi-mashed blueberries. Mix the mixture well with no dry lumps visible.
Pour the batter into a piping bag, and pipe the batter into the donut pan.
Bake for 10-12 min or until donuts have risen and are cooked through. Let it sit 5 min before removing from the pan.
Glaze it with your basic glaze before eating.
