Vegan Choco Chip Cookie

The only choco chip cookie recipe you will ever need!

In my effort to bring you some classic recipes in their vegan form, the next stop was a simple but on point Chocolate Chip cookie. I have made my share of cookies in the last few years, and for the times they are not the way I want them, I blame the oven-simple! But these ones, turned out exactly the way I wanted them to be-smooth, soft and delicious 😊And that is the only reason I am claiming that this will be the only choco chip cookie recipe you will ever need. I was not only happy about how the cookies turned out, but was very pleasantly surprised at how easy they were to photograph. Lately I have been enjoying food photography more than ever. I really look forward to photographing the desserts and I am very excited about the whole process. There are so many resources available for anyone interested in food photography online now, so it has become more attainable to make a career out of it. So now back to chocolate chip cookies, like all my recipes, these are also made with basic ingredients, and have a very easy to follow recipe. You don't need any special ingredients, except for vegan substitute, which I am sure Vegan household would have it on their hand. My aim is to make people not be nervous about baking, or making desserts. I want all to know that they can make desserts as easily as they can any main course. Many of my friends are so apprehensive about making desserts, they often ask me how I enjoy it. Answer is simple- it is not that difficult. Key is to start with basic, easy recipes(like the ones I normally use), to gain confidence and familiarity about baking.

My advice would be to start with a basic vanilla or chocolate cake, then move towards brownies, then cookies, and so on. The more you bake, the more knowledge and experience you will get re the ingredients, your machines, and then you can tweak recipes as you move forward. Serves: 10-12


Ingredients


Vegan Chocolate chip cookies

1 Cup All Purpose Flour

½ Cup Brown Sugar

½ Cup Caster Sugar

½ tsp Baking soda

1 tsp Salt

1 tsp vanilla extract

¼ cup unsweetened almond milk

½ Cup Coconut Oil, melted

1 Cup Vegan chocolate chips



Directions

Vegan Chocolate chip cookies

  1. Preheat the oven to 180C (350F). Line a baking tray with parchment paper.

  2. In a mixing bowl, whisk together the sugars, salt, and coconut oil until well combined.

  3. Add in the almond milk and vanilla, until all sugar has dissolved and the batter is smooth and runny.

  4. Add in flour and baking soda, then fold the mixture. Do not over mix.

  5. Add in the chocolate chips and mix again.

  6. Chill the dough for 15-20 mins.

  7. Place dough by slightly rounded tablespoonfuls or an Ice cream scoop, 2 inches apart onto ungreased parchment paper.

  8. Bake for 12 to 14 minutes or until edges are light brown and tops look set.

  9. Once baked, cool completely before serving.
