With a generous amount of Pistachios in it, this slice can be turned into your on the go breakfast or a mid-day snack.
If you haven't noticed my dessert based puns in each of my recipe, I will not blame you, though I will be very upset! Just kidding, I thought to add something funny in the long blah of words, because as a recipe searcher I also go through various blogs, so sometimes I read everything thoroughly but some days I just want to get straight to the point. That is why I thought to include some fun puns, to break your read if you get bored, that is, otherwise just continue to ignore it, as I believe you would have done before 😂
This is a fool proof Fruit and nut slice; I mean there is nothing that can go wrong in this. It is simple as mixing all the ingredients together one by one, on top of one another and placing the pan in the fridge, and voila! After 4-5 hours you have your fruit and nut slices ready. It is a very healthy snack. You can add any types of nuts, fruits, your preferred muesli mix, just experiment, you will be fine 😊
Ingredients
Pistachio Spread
2 Cup shelled raw Pistachios
1 Tbsp Coconut oil
Salt as per taste
Berries
1 Cup half sliced Strawberries, Raspberries and Blueberries
2 Cups Muesli (preferred flavor)
2 Tbsp Honey
Directions
Pistachio Spread
1. Soak the pistachios for 10-15 mins in water.
2. Place the soaked pistachios, coconut oil and salt in a powerful blender.
3. Blend this mixture for 10 mins(on and off) until the mixture is soft and smooth. If it is too runny, add in more pistachios.
Assemble
1. In a mixing bowl, mix together the muesli and honey.
2. Line a 20 cm square pan with baking paper.
3. Pour the muesli honey mixture into the pan. Press down firmly to evenly spread the mixture through the bottom of the pan.
4. Refrigerate for 20 mins.
5. Mix the berries and pistachio spread in a mixing bowl. Mix lightly, so the berries don't break down.
6. Pour this mixture onto the muesli honey mixture in the pan.
7. Refrigerate for 3-4 hours or till firm.
8. When ready to serve, slice into bars and serve slightly cold.
