Exactly what Valentine's day needs!
Nothing says heart shape like Valentine's day💕 If you are celebrating V-day, and do not have anything heart shaped, is that even the 14th of February! I knew I had to dive into my cheesy side and create a "heart inspired" dessert for my Valentine's day collection-and that is the reason you are looking at this double berry heart mousse.
Few things to note:
1. This recipe serves 2-3 mousse hearts based on your mould size. Please ensure to grease the mould properly before you place the mousse in.
2. It is very essential to let the mousse set for at-least 4 hours minimum. If you are not planning to eat it straight away, then freeze it; but allow 4 hours to thaw before eating.
For Vegetarians, I would recommend using this Vegetarian gelatin instead. I have observed that it is comparatively less effective, so my advise would be to use 5 Tbsp.
Ingredients
Berry Mousse
200 g Strawberries (frozen if not fresh)
200 g Raspberries (frozen if not fresh)
2 Cups Fresh Whipping cream (cold)
4 Tbsp Caster sugar
4 Tsp Gelatin powder
2 Tbsp Water
1 Sponge Cake
Directions
Berry Mousse
1. In a small bowl, combine the gelatin and water. Heat this mixture in microwave for 10-15 secs, until it is dissolved.
2. Take half of the strawberries and raspberries and puree them well. Finely chop the remaining strawberries and raspberries.
3. In a mixing bowl, combine the pureed berries and dissolved gelatin. Add in the chopped berries and combine well.
4. Add in sugar, and mix lightly. Adjust sugar as per taste.
5. In another mixing bowl, whip the fresh cold cream until it is stiff. DO NOT over whip as it may turn runny.
6. Fold in this whipped cream into the berries mixture, and mix softly.
7. Pipe the mousse into heart(or any other preferred) shape mould, and refrigerate for 4-5 hours.
Assemble
1. Serve on a round-cut sponge cake, top with some leftover berry puree if desired.
