Mulled Wine Poached Apple Crumble

Warm your tummies with some hot and spicy mulled wine dessert!


Apple crumble is such a classic dessert that I was not sure how to put a twist on it. Then on a cold Melbourne night, I treated myself with mulled wine, and there came the idea of using mulled wine poached apples to create apple crumble.

Poached fruit is always tricky-you have to be careful so as to not go over or under. Also, not every fruit from the same group will poach in the same way-so remember to constantly check when you are poaching a fruit.

 




Ingredients

Mulled Wine Poached Apples

1 Bottle of any Italian red wine

2 Cinnamon stick

3 Star anise

3 cloves

2 tsp Nutmeg

1 Vanilla pod

1 tbsp Lemon juice

½ Orange, peeled and sliced into rounds

100 gm Caster Sugar

5 Granny Smith Apples, medium- peeled


Apple Crumble

1 ½ Cup All Purpose Flour

2 tbsp Caster Sugar

1 tbsp Brown Sugar

¾ Cup Unsalted butter, slightly chilled

1 Cup Rolled Oats


Directions


Mulled Wine Poached Apples

1. In a deep sauce pan, bring the red wine to a boil over medium heat.

2. Add in Cinnamon, star anise, cloves, nutmeg gratings and vanilla pod.

3. Lower the heat to slow, and let this mixture simmer for 10 mins.

4. After 10 mins add in the Orange rounds, lemon juice and sugar. Let this simmer for additional 10 mins.

5. Be careful not to boil the alcohol. If the wine is about to reach boiling point, lower heat to the lowest, and remove the sauce pan from the heat for few seconds and return back to heat.

6. Add in the full peeled apples.

7. Let the apples cook for another 20 mins.

8. Once the apples are soft and tender-check with knife; take them out and set aside to cool.

9. Take of the Mulled wine from the heat as well and store.

10. Once slightly cooled, chop the apples into long slices.


Apple Crumble

1. Preheat the oven to 180 degree Celsius(350F) for 20 mins.

2. In a medium mixing bowl, add in flour, caster and brown sugar and rolled oats.

3. Keep on slowly adding butter and rub all the ingredients together with fingertips until breadcrumb like texture is obtained.

4. In an oven proof flat baking dish, place the chopped poached apples, pour over some stored mulled wine and top this with the crumble mixture.

5. Bake this in the preheated oven for 20 mins at 180C. or Bake until the crumble is golden brown.

6. When serving, allow the apple crumble to be slightly warm and top it with Vanilla Ice cream if required.
