Pink Champagne Pancakes

Make your morning breakfast a little more romantic with these!


A sweet little twist to your traditional pancake will go a long way. Up your pancake game on any special occasion, or turn any morning into a special one by using this recipe.


This is another one from my Valentine’s day collection- Beautiful Pink Velvet Pancakes infused with Rosé for the perfect start to your special day. No surprise here, this one too has alcohol in it- I mean who doesn’t want to start their day with some light bubbly drink; cant be only me!

The Rosé did give the pancake a not-so sweet flavour, so I decided to add in the Strawberry syrup to compensate that sweetness required. I believe that worked really well. I was lucky enough that the strawberries I bought were a perfect balance of sweet and tangy, which really help the pancakes get their unique flavour.




To be honest, pancake is not at a regular in my household. I can literally count on the fingers of my hands, the number of times I have eaten pancake. And that was my motivation to make this. I hope you like my rendition of this Adult Pancakes. And hey, if you want your kids to enjoy this as well, just skip the Rosé - they will taste just as good.




 




Ingredients

Pink Velvet Pancakes

1 ½ Cup Flour

2 tbsp Cocoa powder

2 tbsp Sugar

2 tsp Baking powder

½ tsp Salt

2 Eggs, medium

1 Cup Buttermilk

¼ Cup Rosé Champagne

2 tbsp Oil

2 drops of Pink food gel


Strawberry Syrup

1 Cup Strawberries, chopped

2 tbsp Rosé Champagne

2 tbsp Water

½ Cup Sugar


Cream Cheese Whipped Cream

1 Cup Cream Cheese

½ Cream Heavy Cream


Directions


Pink Velvet Pancakes

1. Mix the eggs, oil, buttermilk and Rosé Champagne in a small bowl. Whisk them thoroughly and set aside.

2. In a separate bowl, mix all the dry ingredients- the flour, cocoa powder, sugar, salt, baking powder.

3. Gradually mix in the wet mixture into the dry mixture. Mix them until smooth.

4. Heat a greased griddle on medium heat.

5. Pour ¼ cup of the batter onto the griddle. Let it cook till bubbles appear. Then flip the pancake and cook until they are firm and golden. Repeat with the rest of the batter


Strawberry Syrup

1. Mix all the ingredients in a small sauce pan and bring it to gentle boil.

2. Let the mixture cool before pouring on top of the pancakes.


Cream Cheese Whipped Cream

1. Combine cream cheese with heavy cream with a spatula. Don’t over mix, the cream needs to be fluffy.


Assemble

1. When ready to serve, place the whipped cream on top of the pancakes and then pour the strawberry syrup on it.
