Pomegranate Margarita Mini Pavlovas

Who knew tequila could be turned into something this delicious!


SHOTS! SHOTS! SHOTS!

The moment I hear tequila, I immediately think Shots! or even a Margarita or two😉 But now I have something else to be excited about when I have some tequila in the house.

Now meringue is a very touchy subject for many bakers, and I am very well aware of it. So, even if you fail the first time or second, or even more, don't be disheartened. There have been professional bakers with lots of years of experience who still fail at this meringue stuff. This is what I told myself too, when I embarked on the Meringue journey for this pavlova.


Just remember to be patient and calm when working with Meringue.Few things can help to make things better, be sure about your oven temperature(check it if it is accurate before starting) and DO NOT over whisk the egg whites. Ingredients

Pavlova

150 ml Eggwhites, approx. 4-5 eggs

1 Cup Superfine Sugar(caster)

2 tsp Cornflour

2 tsp White wine Vinegar

1 tsp Vanilla Extract


Pomegranate Margarita

30 ml Fresh Lime Juice

60 ml Premium Silver Tequila

90 ml Pomegranate Juice

30 ml Simple Syrup


300 ml Whipped Cream


Directions

Pavlova

1. Preheat the oven to 150C(300F).

2. In a stand mixer bowl, whisk the egg whites until it forms soft peaks.

3. Gradually add in sugar, spoon by spoon, while whisking, until the mixture is glossy.

4. Sift through the cornflour, add in vinegar and vanilla; and fold into the egg white mixture.

5. On a parchment paper, spoon the meringue in form of circles. Make indentation in the centre.

6. Put the tray with the meringue into the oven. Bake it for 1 hour for 130C. Make sure meringue does not turn brown.

7. Once baked, remove from oven, and let them cool on the wire racks.


Pomegranate Margarita

1. In a jar, mix all the ingredients and stir well.


Assemble

1. Take half of the Whipped cream and add in 2 tbsp of pomegranate margarita, and fold well. Add in the remaining cream and mix lightly.

2. Take the cooled mini meringues, add the whipped cream, drizzle pomegranate margarita, and top it with some pomegranate seeds and pieces.

3. Drink the rest of the leftover Margarita. Enjoy!
